Elders Quorum Social

Because Matthew is the EQ President I got elected to help him cook food for the Progressive dinner EQ social this past weekend. It was a lot of work, but it was sooooo yummy!!
I only wish I had taken pictures of the incredible cakes that were brought over for the dessert portion. Those cakes were delish, but added about 10 pounds to my hips!

Matthew and I cut tons of chicken to be made into cutlets. Not really tons, but a lot! This is what we ended up with and it wasn't nearly enough by the time the night was over. These are really easy to make. You get a really sharp knife and slice the chicken into really thin slices (easier when the chicken is still partly frozen). Dip the chicken in egg and then a mixture of Romano cheese and Italian bread crumbs. Cook in extra virgin olive oil. Easy peasy!
This is a picture of a portion of the crepes we made. The night before the event Matthew and I cooked crepes for like an hour. I think it was like 106 crepes or something like that. We just use a recipe from our "Better Homes and Gardens" cookbook. Really simple to make. I think there's one pan missing from the picture. These are the pans of manicotti, that Matthew rolled! One of my FAVORITE things that Matthew makes. Of course he uses his homemade tomato sauce recipe, which if I gave you, I'd have to kill you ;)
You could do the same recipe with bottled sauce, use crepes for the shell and make the filling from ricotta, fresh mozzarella, Romano, & eggs. I think that's all, but I'll have to check with Matthew to see if he added anything else in there. Anyway, you fill the shells, place them in the sauce, cover them in sauce and cook them for about 45 mins at about 350 degrees. Again, easy peasy--well, if you're only cooking one pan. If you're cooking this much, you better get a helper or two :)

I didn't count all the people who came through the door, but I think we fed somewhere around 60-70 people. It was so great to get to meet new people and to eat yummy food at the same time. Thanks Matthew & EQ presidency for another fun social!
